Asparagus Bundles Wrapped in Serrano Ham

Asparagus wrapped with serrano ham is one of our favourite dishes for a quick, light lunch or brunch dish. We like to serve it with a soft egg as well - fried, poached or soft boiled all work well. Add some toasted bread if you like too.

Serves 2

Ingredients: 

8-12 asparagus (4-6 per person)

4-6 slices of serrano ham

2 eggs

olive oil 

salt (optional)

Method:

Preheat your oven to 425 degrees F. Prepare a baking sheet with a drizzle of olive oil or cooking spray. 

Prep your asparagus by chopping off the woody ends, keeping them roughly the same length. Lay a piece of serrano ham on the work surface and place a couple of asparagus pieces on top of the ham.  Roll tightly on the diagonal to cover as much of the stalk as you can. Repeat with the remaining asparagus.

Place your bundles on the baking tray with the ends of your ham on the bottom if possible. Spray or drizzle lightly with olive oil and bake until the ham looks crispy -  about 12-15 minutes. 

While the asparagus is cooking, poach or gently fry your eggs. 

When ready, serve each plate with a few bundles of asparagus and ham, and your egg on top or to the side.
