This is a popular vegetable dish from central Spain made with zucchini, onion, red peppers and tomato, similar to a French ratatouille. This version includes jamon serrano, but for a vegetarian version, simply leave it out. Pisto Manchego makes a great tapas dish alongside some good bread, or served as a vegetable side dish with meat or fish. We really like it served with a fried egg on top for a simple and healthy meal. It can be made ahead and reheats well.
Ingredients: (serves 2-4)
2 tbsp olive oil
50g jamon serrano finely chopped
½ yellow onion
3-4 cloves of garlic
1 zuchinni, chopped
2 tomatoes, skinned, deseeded and chopped (or use good tinned plum tomatoes)
1 red pepper, chopped
¼ tbsp smoked Spanish paprika
2 eggs (optional)
Salt and pepper to taste
Method
Heat the olive oil in a pan and add the jamon serrano and onion. Heat over medium heat for about 5 minutes, then add the chopped garlic, zuchinni, tomato and red pepper. Give it a good stir through over medium to hight heat for a couple of minutes and add in the paprika. Turn down the heat to a low to medium setting and simmer 15-20 minutes, or until the vegetales are soft. Meanwhile, fry or poach your eggs. Season with salt and pepper and serve with the fried egg on top and some nice bread.
