Grilled Mahon & Piquillo Pepper Sandwich
Ingredients (serves 2):
4 slices of rustic Spanish-style sourdough or country bread
100g Mahon cheese, sliced
4–6 piquillo peppers, drained
1–2 tablespoons extra virgin olive oil
Optional: a few slices of mild chorizo or salchichón
Optional: a touch of garlic (rubbed on the bread)
Instructions:
Prep the bread: Lightly brush the outsides of the bread slices with olive oil. If using garlic, rub a cut clove on the inner side of each slice for a gentle hint of flavour.
Assemble the sandwich: Layer Mahon cheese on one slice, top with piquillo peppers, and add chorizo or salchichón if using. Top with the second slice, oiled side facing out.
Grill: Heat a pan over medium heat. Grill each sandwich for 3–4 minutes per side, pressing gently, until golden and the cheese is melted.
Serve: Slice and enjoy warm with a handful of olives or a glass of Spanish red.
