This Manchego cheese is aged, giving it a sharper, nutier flavour and a firmer, more brittle texture than its younger namesake. It is produced in Central Spain's La Mancha region, a territory known for its fierce winds, violent temperature swings and desert-like aridity.
This Manchego is made using traditional methods under strict quality guidelines. Our dairy can look back to three generations of appasionate cheesemakers and it is one of the most awarded dairies in La Mancha, both nationally and internationally, and the only specialized in producing only sheep's milk cheeses.
Manchego cheese and membrillo (quince jelly) are the perfect partners and make a delicious and traditional Spanish appetizer.
The manchego is aged for 12 months, giving it a sharper, nuttier flavour and a firmer, more brittle texture. Membrillo, or quince paste, is a firm, fruity complement to the cheese, which tastes like a combination of pear, apple and citrus. The sharpness of the cheese with the fruity sweetness of the membrillo is a delicious combination that you're going to love.
Cut some triangles of the manchego and then spoon some of the delicious membrillo, and place it on top. Serve with some crackers on the side or along with some more cured meats for a fantastic Spanish appetizer platter.

Garrotxa is an artisanal goat milk cheese produced in the Garrotxa region of Catlonia., Spain. With a minimum 2 months of maturing, it resuts in a smooth, slightly salty, creamy texture. We fell in love with it at Spanish Pig on our first bite.
This cheese was almost extinct by the early 1980s, thankfully it has been revived by young cheesemakers and goat farmers' cooperatives in its birthplace of Garrotxa.
A pasteurized semi soft cheese, traditionally made from the milk of Murciana goats and aged in caves to enhance mold development and the resulting flavor.

Fiery Manchego & Chorizo Toasts (Serves 4 as tapas)
Ingredients:
