Baby eels, or Angulas as they are called in Spain, are one of the most luxurious seafood delicacies of Spain. We were excited to get our hands on these delicious plum and pickled oysters by one of our favourite conservas producer in the world, Peperetes.
The oysters are cooked and then opened by hand to extract the meat. An arduous task and one that can only be done with the experience of Peperetes specialized workers. Then the homemade pickle recipe is prepared, with olive oil and vera paprika.
