Tío Uco 2023 from Alvar de Dios Hernández is a beautifully expressive red that brings the wild heart of Castilla y León straight to your glass. Made mostly from old-vine Tempranillo and a touch of Garnacha, grown organically in the high-altitude, sandy soils of El Pego in the comarca of Guareña, this wine is all about purity and place.

On the nose, expect vivid aromas of red cherry, raspberry, dried herbs, and crushed flowers. On the palate, it’s juicy and fresh, with fine tannins, a gentle earthiness, and a mineral backbone that reflects the granite and quartz in the soil. It’s medium-bodied and unoaked, allowing the fruit to shine with clarity and lift. The finish is long, clean, and quietly complex.

Alvar de Dios is part of a wave of winemakers redefining the wines of inland Spain—focusing on organic farming, low intervention, and forgotten old vineyards. Tío Uco is his most approachable bottling, but it’s far from simple. It captures a sense of place that’s honest, rustic, and full of energy.

Pair it with grilled vegetables, roast chicken, charcutería, or lentil stew—this is a food-friendly red with soul and structure. Serve slightly cool to bring out its liveliness.

Only a limited number of bottles are available in Ontario. A perfect intro to one of Spain’s most exciting young producers.

Lousas by Envínate is a brilliant expression of the Mencía grape, grown on steep, slate-rich slopes in the Ribeira Sacra region of Galicia. The name “Lousas” refers to the slate soils that define the terroir, and this mineral character is at the heart of the wine’s elegance and depth.

Made by the cult-favourite winemaking team at Envínate, Lousas is all about freshness, purity, and a deep connection to place. The wine is light to medium-bodied, but don’t let that fool you—it’s packed with complexity. Aromas of wild red berries, crushed herbs, rose petals, and wet stone lead into a palate that is vibrant and silky, with juicy acidity and incredibly fine tannins. There’s a whisper of smoke and spice, likely from the schist soils and traditional vinification, but oak influence is minimal. It’s a wine that drinks like a cross between Cru Beaujolais and cool-climate Pinot Noir, but with unmistakable Atlantic Galician character.

Pairing suggestions from Spanish Pig: Lousas shines alongside our Iberico Chorizo, where the wine’s acidity cuts beautifully through the rich paprika and fat. Try it with Hand-Carved Jamón Ibérico de Cebo or Lomito Ibérico for a refined match—the salt and umami of the cured meats bring out the wine’s floral notes and minerality. For a heartier option, pair with our Morcilla de Burgos (Spanish blood sausage) or a simple board of aged Manchego and Piquillo Peppers.

This is a wine for lovers of nuance and place—authentic, expressive, and unforgettable.
