Straw yellow color with green nuances. Vibrant, persistent and delicate pearl. The nose is dusty with hints of white fruits and citrus fruit. A touch of brioche completes the whole. The taste is nice and full and dry and results in a long finish dominated by ripe fruit.
Perfect as an aperitif, but also in the kitchen it can be widely used. Specifically with rice dishes, seafood, fried fish, pasta or even magret de canard.
climate
Continental climate with Mediterranean influences. Relatively short but warm and dry summers with cooling during the night. Winters can be long and cold.
soil
Poor soils with lime and clay that easily retain water in the lower layers, compensating for the limited rainfall.
vinification
75% Macabeo and 25% Chardonnay. The grapes are grown completely organically. First, the wine receives a classic fermentation under cool and controlled temperature. Then a 2nd fermentation is started in the bottle just like with champagne. The wine remains 'sur lattes' for more than 12 months with an increase in complexity and finesse as a result.
The vineyards of Cava Bella Mistala are located in the highlands of Valencia, Requena. Most cavas come from the Penedès, but here on this plateau the temperature can drop seriously at night and in winter. However, the cold is a guarantee for fresh and lively sparkling wines, which is not a matter of course in a country like Spain. Moreover, the vineyards here are completely ecologically processed and more use is made of a grape such as Chardonnay, which at this altitude gives the wine the necessary structure and fresh citrus accents to the classic Macabeo. The wine estate only started in 2007 and is therefore equipped with all modern requirements to make characterful and exciting sparkling wines. In contrast to the vast majority of cavas, quality is therefore fully committed here, which has already earned them the necessary prizes in national and international competitions and tastings in their short existence.
