Los Peperetes has taken its celebrated collaboration with Galicia's Airas Moniz one step further, pairing the prized ventresca (belly) of Almadraba bluefin tuna with Airas Moniz's exceptional artisan butter.

Ventresca is the most succulent and coveted part of the tuna, prized for its natural marbling, delicate layers and almost melting texture. The bluefin is carefully cooked to retain that extraordinary richness before being covered with melted Airas Moniz butter. Inside the tin, something rather magical happens: the natural fat of the tuna slowly melds with the butter, creating an incredibly silky, rich and complex preserve.

And this is no ordinary butter. Made in Chantada, Galicia, from the raw milk of pasture-raised Jersey cows, Airas Moniz's intensely golden butter comes from one of Spain's most acclaimed artisan dairies. Airas Moniz products are used by some of Spain's leading chefs, including Joan Roca, Javier Olleros, Diego Guerrero and Andoni Luis Aduriz, while the dairy has accumulated major national and international awards for its cheeses and sustainable approach.

The partnership itself has pedigree: in 2026, Los Peperetes' original bonito tuna belly with Airas Moniz butter received the Galicia Alimentación “Excelencia Atlántica” Award. This bluefin version takes that remarkable idea into even more luxurious territory.

The result is extraordinary: buttery, saline, deeply savoury and almost impossibly tender.

Spanish Pig is the exclusive Canadian importer of this very special preserve. Quantities are extremely limited, and we don't expect these tins to stay on our shelves for long.

How to enjoy: Submerge the unopened tin in hot water for approximately two minutes before opening. This gently melts the butter and brings the ventresca to its perfect silky texture. Serve simply with excellent bread — this is a product that needs absolutely nothing else.
