Bidaia Txakolina 2023 “Latido de Sara” is a bright, coastal white wine that pulses with the fresh energy of the Basque Country. Made from 100% Hondarrabi Zuri grapes grown in the Getariako Txakolina DO, this wine captures the Atlantic’s influence in every crisp, zesty sip.

“Latido de Sara” translates to “heartbeat of Sara,” referencing the village near the border of Spain and France where this small project is rooted. The wine is fermented with native yeasts and bottled with a light natural spritz, giving it a lively mouthfeel that accentuates its vibrant acidity.

On the nose, it offers aromas of green apple, lime peel, and wet stones, with a faint herbal note of fennel or sea herbs in the background. The palate is electric—lean and saline, yet juicy—with flavors of citrus, underripe melon, and a mineral snap that lingers on the finish. The slight fizz (typical of Txakolina) lifts the wine and makes it incredibly refreshing.

This is a wine made for pairing with the sea: oysters, grilled sardines, or a classic Basque pintxo. It’s also a brilliant aperitif on its own, especially served well chilled on a warm day.
