The cheese is traditionally wrapped in sycamore or maple leaves, which impart subtle earthy aromas while helping to maintain its moisture and structure during maturation.
Its texture is creamy yet slightly crumbly, with striking blue-green veins running through a pale ivory paste. On the palate, Valdeón delivers a bold and complex flavour profile.
