Lousas by Envínate is a brilliant expression of the Mencía grape, grown on steep, slate-rich slopes in the Ribeira Sacra region of Galicia. The name “Lousas” refers to the slate soils that define the terroir, and this mineral character is at the heart of the wine’s elegance and depth.
Made by the cult-favourite winemaking team at Envínate, Lousas is all about freshness, purity, and a deep connection to place. The wine is light to medium-bodied, but don’t let that fool you—it’s packed with complexity. Aromas of wild red berries, crushed herbs, rose petals, and wet stone lead into a palate that is vibrant and silky, with juicy acidity and incredibly fine tannins. There’s a whisper of smoke and spice, likely from the schist soils and traditional vinification, but oak influence is minimal. It’s a wine that drinks like a cross between Cru Beaujolais and cool-climate Pinot Noir, but with unmistakable Atlantic Galician character.
Pairing suggestions from Spanish Pig: Lousas shines alongside our Iberico Chorizo, where the wine’s acidity cuts beautifully through the rich paprika and fat. Try it with Hand-Carved Jamón Ibérico de Cebo or Lomito Ibérico for a refined match—the salt and umami of the cured meats bring out the wine’s floral notes and minerality. For a heartier option, pair with our Morcilla de Burgos (Spanish blood sausage) or a simple board of aged Manchego and Piquillo Peppers.
This is a wine for lovers of nuance and place—authentic, expressive, and unforgettable.
Now available in multiple sizes, our Ibérico pork belly brings a whole new level of flavour and richness to your kitchen. Cut from free-range, acorn-fed Ibérico pigs raised in Spain’s dehesas, this pork belly isn’t just marbled – it’s magic. The fat is silky, nutty, and deeply infused with flavour thanks to the pigs' unique diet of bellotas (acorns) and herbs, giving the meat a depth you simply won’t find in conventional pork.
Whether you're roasting it low and slow for that crispy, golden crackling or slicing it thin and searing it on a hot grill, Ibérico pork belly is versatile, indulgent, and undeniably impressive. It’s ideal for tapas, BBQs, or an unforgettable main course that’ll have everyone asking for seconds.
Each cut is expertly butchered and vacuum-packed for freshness, making it easy to portion, store, and prepare. Choose from smaller cuts for a tapas-style dinner or go big for a show-stopping roast. However you cook it, you’re in for a juicy, umami-rich experience that’s unmistakably Spanish.

Deep, bold, and beautifully complex, the 75% Bourbon Dark Chocolate Bar by McGuire Chocolate Company is a bar for true dark chocolate lovers. Made bean-to-bar in New Brunswick, this small-batch creation features ethically sourced cacao infused with the subtle warmth of real bourbon — not in a loud, overpowering way, but as a gentle undertone that adds depth, aroma, and intrigue.
The high cacao content delivers an intense, full-bodied chocolate experience, rich in natural cocoa notes with hints of vanilla, oak, and spice — all elevated by a whisper of bourbon that lingers on the finish. There’s no harsh alcohol bite, just a smooth, slow-unfolding flavour that calls to mind the elegance of a post-dinner chocolate negro con licor in a tucked-away Spanish bar.
This bar is beautifully balanced: bold without bitterness, indulgent without excess. Whether paired with a glass of Rioja, sipped alongside a neat bourbon, or enjoyed all on its own, it offers a moment of true artisanal indulgence.
Ingredients: Organic cacao, organic cane sugar, bourbon.
No artificial flavours, no preservatives — just pure craft chocolate with a spirited twist.
From the producers
"This aromatic chocolate was made by soaking Kokoa Kamili cacao nibs in a Bulleit bourbon for 1 week. We then carefully dry the nibs before we begin grinding. We paired Kokoa Kamili nibs with Bulleit Bourbon because of their complimentary citrus notes. The Kokoa Kamili fermentary, located in the Kilimanjaro valley, purchases wet cacao beans from almost 3000 smallholder farmers, most of whom farm between 0.5-2 acres of cocoa. Prior to the founding of Kokoa Kamili the only cacao companies in the country were focused on buying large volumes of commodity cocoa for cheap, cheap, cheap. The result: Tanzania had one of the lowest GDP per capita rates in the world for rural cacao farmers."

The 2023 El Pájaro Rojo is a vibrant expression of pure Mencía from Bierzo’s Losada Vinos de Finca. Crafted from 30‑ to 40‑year‑old vineyards—especially in cooler sites like Valtuille de Abajo, Pieros, and Corullón—it’s deliberately youthful, fresh, and true to its terroir .
This wine undergoes a traditional vinification: hand-harvested grapes are fermented with native yeasts, followed by four months of ageing in French oak barrels, enhancing texture without overshadowing fruit . The result is soft, velvety, and approachable—with delicate violet florals and bright red berries on the nose that carry through to a rich, unctuous palate .
Critically acclaimed, the 2023 vintage earned a solid 90 points from both James Suckling and Tim Atkin, praising its “fresh blueberries, mulberries and dark cherries,” lively medium body, and medium-length finish, with recommendations to drink now through 2026 .
Tasting at a modest 13.5–14% ABV, it balances freshness and structure, supported by subtle tannins and mineral depth . Despite being youthful, it shows pleasing complexity: earthy-meaty undertones, ripe fruit, and a soft-textured finish .
Its easy-to-drink style, freshness, and terroir-driven character make it versatile—excellent with grilled meats, pasta, poultry, or simply enjoyed on its own.
In summary, the 2023 El Pájaro Rojo is an expressive, fruit-forward, and polished young Mencía. Its combination of floral elegance, juicy red fruit, earthy-mineral depth, and fair pricing makes it a standout value from Bierzo.

Bidaia Txakolina 2023 “Latido de Sara” is a bright, coastal white wine that pulses with the fresh energy of the Basque Country. Made from 100% Hondarrabi Zuri grapes grown in the Getariako Txakolina DO, this wine captures the Atlantic’s influence in every crisp, zesty sip.
“Latido de Sara” translates to “heartbeat of Sara,” referencing the village near the border of Spain and France where this small project is rooted. The wine is fermented with native yeasts and bottled with a light natural spritz, giving it a lively mouthfeel that accentuates its vibrant acidity.
On the nose, it offers aromas of green apple, lime peel, and wet stones, with a faint herbal note of fennel or sea herbs in the background. The palate is electric—lean and saline, yet juicy—with flavors of citrus, underripe melon, and a mineral snap that lingers on the finish. The slight fizz (typical of Txakolina) lifts the wine and makes it incredibly refreshing.
This is a wine made for pairing with the sea: oysters, grilled sardines, or a classic Basque pintxo. It’s also a brilliant aperitif on its own, especially served well chilled on a warm day.
With only a small number of bottles produced, Bidaia Txakolina 2023 is a pure, joyful expression of Basque winemaking—a wine that reflects not only its rugged maritime landscape but also the heartbeat of a place few travelers ever see. Unfiltered, vibrant, and deeply authentic.
La Curiosa’s Large Mussels (6/8 per can) are a premium conserva that showcase the bold flavor and craftsmanship of Galicia’s seafood traditions. These are not your average tinned mussels—each one is plump, meaty, and meticulously hand-packed to preserve its delicate texture and natural richness. Harvested from the pristine waters of the Rías Gallegas, these mussels are sustainably farmed and carefully selected for size and quality before being prepared in a classic escabeche sauce.
The escabeche—a bright, tangy marinade of olive oil, vinegar, paprika, and spices—perfectly complements the mussels’ briny sweetness, adding layers of warmth and depth without overpowering their natural character. The larger size of the 6/8 variety means each bite is satisfyingly substantial, with a velvety mouthfeel and a lingering, savory finish.
These mussels are ideal as the centerpiece of a tapas spread, paired with crusty bread to soak up the sauce or served over warm potatoes with a touch of parsley. They also shine in a salad with roasted red peppers, or alongside a glass of Albariño or a light, chilled vermouth.
La Curiosa is known for its playful, design-forward packaging and commitment to quality—and this tin is no exception. Both visually striking and gastronomically impressive, it’s a go-to choice for those seeking a true taste of Galicia’s sea in every luxurious mouthful. Whether shared with friends or savored solo, La Curiosa’s large mussels are a conservas experience that’s anything but ordinary.
They only use mussels of the species (Mytilus galloprovincialis). These are cultivated on rafts, floating platforms from which ropes hang submerged in the water to which the mussels adhere.
Our estuaries are the world's main source of this mollusk, where they have the best food and grow to a larger size.
For this specific format, we use large specimens taken from the best-located rafts in our estuaries, cleaned and canned by hand one by one.
Once selected, fried in olive oil and lovingly hand-packed, one by one, they are covered with our marinade made with natural ingredients such as natural paprika, black pepper, cloves and bay leaves.
