Funàmbul Brut Nature is the kind of Cava that makes opening a bottle feel like an occasion, even if the occasion is simply good food and good company. Made by Entre Vinyes in Catalunya’s Penedès region, it comes from organically farmed, mature family vineyards rooted in poor, chalky soils near the Mediterranean. The vines share their surroundings with a rich variety of plants and wildlife, a setting that helps the fruit develop character and freshness.

The blend brings together three classic Cava grapes: Xarel·lo for body, Macabeo for elegance and Parellada for lift. Made by the traditional method, the wine undergoes its second fermentation in bottle and spends time resting on the lees, which adds texture and a gentle bakery note. Brut Nature means it is finished without a sweetening dosage, so the fruit and lively acidity speak for themselves.

Expect fine, persistent bubbles and a bright, clean palate. Green apple, pear and peach skin meet subtle hints of bread dough, with a lightly saline finish that makes the next sip particularly tempting. It has enough delicacy to pour as an aperitif and enough savoury character to take its place at the table.

Try it with Jamón Ibérico, Manchego, anchovies or a platter of conservas. It is equally at home with fried seafood, croquetas and a bowl of salty almonds. Serve well chilled, pour generously and let the food do the rest.
