Fangst Brisling No. 4: The Nordic Sardine w/ Allspice and Clove, 100g

Fangst Brisling No. 4 takes delicate Nordic sardines in a wonderfully aromatic direction. The small, tender brisling are preserved with allspice and clove, spices that bring warmth, gentle sweetness, and a subtly peppery depth to the fish without turning it into something heavy or overpowering.

It is a distinctive tin, but a very elegant one. The sardines remain at the centre: soft-textured, savoury, and naturally rich, while the spices give them a faintly festive, Scandinavian character. Allspice contributes notes reminiscent of pepper, nutmeg, and cinnamon, while clove adds an earthy perfume and a lingering warmth. Together, they make this an especially good choice for cooler-weather grazing, though it is equally compelling straight from the tin at any time of year.

Serve on buttered rye bread with pickled red onion or sharp mustard. They are lovely alongside roasted beetroot, apple slices, and crème fraîche, or added to a warm potato salad with dill and a little lemon. For a simple canapé, place one on crispbread with soft cheese and a few chopped cornichons.

A dry, bright white wine with good acidity works beautifully here, while a clean lager or chilled cider makes a relaxed alternative. An unusual and exceptionally well-composed Nordic conserva.
