Rosara’s Salsa Brava stays true to the classic Spanish preparation, made in the traditional style without tomato. Instead, its depth and character come from Piquillo peppers blended with the heat of alegrías riojanas, the iconic spicy peppers of the Ebro Valley, along with cayenne for an extra lift. The result is a bold, vibrant sauce with a rounded flavour profile that balances spice, sweetness, acidity, and warmth. Despite its intensity, it contains only 5.9 percent fat, making it a lighter option than many commercial versions.

This sauce stands out for the quality of its ingredients and the complexity achieved through slow cooking. Piquillo peppers give natural sweetness, pimiento choricero adds body, and a touch of Sherry vinegar, white wine from Jerez, and brandy brings sophistication. A small amount of fish broth enhances savouriness without overwhelming the palate.
