Simple Spanish Tapas Recipe: Mussels en Tostada
Ingredients:
1 tin Peperetes Mussels
Sliced sourdough or baguette
Extra virgin olive oil
1 small shallot, finely diced
A squeeze of lemon
Parsley, chopped
Method:
Toast the bread and brush lightly with olive oil. In a bowl, mix the shallot, lemon, and a spoonful of the mussels’ marinade. Place 1–2 mussels on each toast, spoon the dressing over, and finish with parsley. Serve immediately as an easy, elegant tapa.
We were excited to get our hands on these delicious plum and pickled oysters by one of our favourite conservas producer in the world, Peperetes.
The oysters are cooked and then opened by hand to extract the meat. An arduous task and one that can only be done with the experience of Peperetes specialized workers. Then the homemade pickle recipe is prepared, with olive oil and vera paprika.
Ingredients: Oysters (Molluscs), olive oil, vinegar, bay leaf, spices and salt. May contain traces of crustaceans and fish.

The presa is from the shoulder of the pig, a part of the loin where it meets the shoulder blades. It is a thick cut, with a proportional, balanced marbling of fat that gives this piece its unique texture. The exterior can be seared on all sides for 10-15 minutes and the meat then be left to rest in a low oven for around a quarter of an hour to produce a tender, flavoursome meat.
A good size piece ideal for the barbecue over an open flame or grill. One piece is suitable for 3-4 people as a main course.
