2022 was dry year with a pure expression of Montsant's Mediterranean terrior. More flower and fruit expression and volume. 85% syrah and 15% grenache gris this cuvee has more depth, tannin and acidity than your average rosé, it may be worth considering this as a light red. A gorgeous interplay between dual limestone and decomposed granitic soils. Half of the grapes were directly pressed, and half saw 18-hours of skin contact, giving it a gorgeous deep pink hue. This was Cosecha's first collaboration wine made at harvest in 2018. 

Now a success in Canada, Spain, the UK and Germany, the name, a nod to the iconic Jimi Hendrix song Foxy Lady, is an unconventionally delicious wine with notes of strawberry, fresh cut watermelon, grapefruit, cinnamon and pepper. 

There’s a good amount of power with Foxy Lady, with a generous palate and a deliciously saline finish.

Rubia Gallega Sirloin Steaks – Legendary Flavour, Spanish Excellence

Raised in the green, rain-swept pastures of Galicia in northwest Spain, Rubia Gallega cattle (the “Galician Blonde”) are an ancient breed celebrated for their exceptional flavour, golden-yellow fat, and natural marbling. These cattle are reared slowly and live up to 8 years or more, allowing the meat to develop a richness and complexity unmatched by conventional beef.

The sirloin cut is juicy and full-flavoured, with the perfect balance of tenderness and savoury depth. When seared simply, it delivers a mouthwatering experience: bold, buttery, and infused with the unique character of its Atlantic terroir.

Simple Spanish Steak Plate
A fuss-free way to let the beef shine:

Ingredients:

• 1 Rubia Gallega sirloin steak

• Olive oil

• Sea salt flakes

• Piquillo peppers

• Marinated olives

• Thin-cut chorizo

Method:
Let the steak come to room temperature. Heat a cast-iron pan until very hot. Rub the steak with olive oil and sear for 2–3 minutes on each side for medium-rare. Rest for 5 minutes, then slice thinly against the grain. Serve with warmed piquillo peppers, a handful of marinated olives, and slices of chorizo. Pair with rustic crackers or crusty bread.

Wine Pairing:

Clarete is Goyo's interpretation of a classic among Spanish wines. It's a light red made with a blend of cofermented Tempranillo and Albillo. Fresh and fragrant with aromas of wild red berries, shrubbery and pine scents, a milky hint and strokes of dark soil. 

Medium bodied with beautiful acidity, Clarete is lightweight, fresh and fruit-forward on the palate. This wine serves tasty tannins enhanced with smoky and spicy flavours when swirled in the glass. 

Goyo Garcia Viadero’s roots in Ribera Del Duero run very deep: he has been working in the area since before the establishment of the D.O., and his family has been working in viticulture for hundreds of years. While grape growing and winemaking in the region is exceedingly ancient (Goyo’s cellar dates to the Roman era), the modern history of the region began with the founding of the Ribera del Duero D.O. by 12 wineries in 1982. In the past 40 years, this number has grown massively, and the region’s reputation for extracted, oak-influenced wines made primarily from Tempranillo has been solidified by the emergence of nearly 300 bodegas, including the producers of some of the most expensive Spanish wines.

Goyo’s approach makes him the region’s “black sheep”, as he has rejected additives, new oak, and intense extraction which are characteristic of the region’s wines. Instead, greatly inspired by natural winemakers like Pierre Overnoy from the Jura, Goyo began farming without chemicals and making wines in a style more like his grandparent's than his neighbors. Beginning with three parcels of old vines in 2003, he has charted his own course in the increasingly industrial and commercial landscape of Ribera del Duero, embracing centenarian vineyards and traditional methods of winemaking in equal measure.

From those few hectares of initial vineyards in 2003, Goyo and his wife Diana Semova Georgieva now manage the organic farming of roughly 40 hectares of vines in Ribera del Duero, making their own wines from roughly 10 of those hectares. These selected plots of old vines, mostly around the town of Roa, are planted to Tempranillo, Graciano, Albillo, and Malvasia; most vineyards, especially the oldest plots, are co-planted to red and white varieties.

100% Tinta Fina (Tempranillo) from the Los Quemados vineyard of 56-year-old vines planted on red sands with pebbles. At 960m above sea level this is one of the highest vineyards in Ribera del Duero. The grapes are destemmed and macerated for 5-6 days in temperature-controlled stainless steel tanks. As fermentation begins, the juice is racked off the skins into old French oak barrels to ferment and complete malolactic. This style of shorter maceration winemaking is what Goyo terms “clarete.” Bottled without the addition of SO2 and without fining or filtering.

Garrotxa is an artisanal goat milk cheese produced in the Garrotxa region of Catlonia., Spain. With a minimum 2 months of maturing, it resuts in a smooth, slightly salty, creamy texture. We fell in love with it at Spanish Pig on our first bite. 

This cheese was almost extinct by the early 1980s, thankfully it has been revived by  young cheesemakers and goat farmers' cooperatives in its birthplace of Garrotxa.

A pasteurized semi soft cheese, traditionally made from the milk of Murciana goats and aged in caves to enhance mold development and the resulting flavor.

The seas off the coast of Galicia in Northwest Spain are cool and rich in nutrients, making them an incredible fishing ground. Their facilities are very close to where the seafood is harvested, so they are able to use the freshest fish and shellfish available.

We have never tried a sardine more delicate and mild than those of Galicia. They are harvested in small batches from the cool waters of the Rias, tidal rivers in north western Spain. The result is a tender, mild sardine, with the delicate taste of the sea but without any strong fishy flavors.
