Garrotxa is an artisanal goat milk cheese produced in the Garrotxa region of Catlonia., Spain. With a minimum 2 months of maturing, it resuts in a smooth, slightly salty, creamy texture. We fell in love with it at Spanish Pig on our first bite. 

This cheese was almost extinct by the early 1980s, thankfully it has been revived by  young cheesemakers and goat farmers' cooperatives in its birthplace of Garrotxa.

A pasteurized semi soft cheese, traditionally made from the milk of Murciana goats and aged in caves to enhance mold development and the resulting flavor.

Each sardine has been selected for their quality, packed by hand and preserved in olive oil. They stand out for their silver appearance and magnificent presentation; bright and tasty, with a smooth and juicy texture.

Conservas de Cambados has been in business since 1985 and is located in northwestern Spain, in Galicia near the "Ría de Arousa" - a river known for its size and its seafood that is caught and preserved by the company in its famous cans surrounded with a net.

We fell in love with the taste and simplicity of this Cambados Paella Kit. From their expertise in canned seafood over several decades, Cambados Conservas have created a paella kit that we think is close to genius - can you imagine cooking a delicious paella in just 20 minutes?

This has become one of our favourite products and we must confess, we have kept a few for ourselves! This one includes squid in ink to give the paella dish its black colour. So delicious and unique, this is a must-try product!

Seafood paella Kit for 2 persons:

1. Open the can and empty the contents in a  26cm pan.

2. Fill the empty can to the top with water and pour it to the pan.

4. Stir and bring to boil. Empty the rice bag and spread it evenly. Stir.

4 Let it simmer over medium heat for 18-20min, or until the water is absorbed.

Finish with a squeeze of fresh lemon to really bring out the flavours. Que aproveche!

These dishes will catch any spilled oils or brine so that you can swipe them up with good crusty bread, and pass the fish to others at the table!

Firm, tasty, tiny sardines (Sardinillas), hand-packed in Spicy oil - possibly as near as you can get to fresh sardines without buying them off the beach! Serve as a tapas dish or in a 'bocadillo' - a sandwich made using crusty bread - and perhaps some garlic mayonnaise.

From the Estuaries of Galicia, Spain, comes the most wonderful small sardines in spicy sunflower oil we have ever tried. This is a true Spanish food gem and we are very pleased to be able to offer it to you. Rich in vitamins D and B12, they are also an excellent source of calcium and omega-3 fatty acids. The Spanish believe canned seafood is a delicacy to be shared and enjoyed! They take great pride, and great care, to harvest the best seafood and package it with the utmost care. The result is the purest, most delicate, and exquisite tasting seafood on the planet! A true delicacy.

Do not be fooled by other sardines. “Conservas de Cambados” makes a "Gourmet" line, which is their highest quality. "Gourmet" is clearly at the top of the front label as shown in the photo, the "Conservas de Cambados" logo is prominently displayed, and the tin is rectangular with rounded corners. The seas off the coast of Galicia in Northwest Spain are cool and rich in nutrients, making them an incredible fishing ground. Their facilities are very close to where the seafood is harvested, so they are able to use the freshest fish and shellfish available.

We have never tried a sardine more delicate and mild than those of Galicia. They are harvested in small batches from the cool waters of the Rias, tidal rivers in north western Spain. The result is a tender, mild sardine, with the delicate taste of the sea but without any strong fishy flavors.

Oh so simple, these tiny little cockles from Alamar taste of the sea. Close your eyes and transport yourself to a sunny seaside cafe in Spain. 

We like to serve and enjoy these cockles simply. Open the can and add a squeeze of lemon juice. The perfect accompaniment to a glass of cold white wine.

Pintxos Gilda are a Spanish appetizer, often served with a cocktail before dinner. A cantabrian anchovy, a green anchovy stuffed olive and a guindilla (mild Spanish chilli pepper) all secured with a toothpick. We love the simplicity and elegance of this little appetizer.

Simply made, with no preservatives, this is a healthy treat for any seafood lover.  We like to serve for a light lunch or snack - on its own, with some nice bread for mopping up the sauce. Enjoy!

Ingredients: Squid, sunflower oil, tomato, water, onion, salt, spices.

The presa is from the shoulder of the pig, a part of the loin where it meets the shoulder blades. It is a thick cut, with a proportional, balanced marbling of fat that gives this piece its unique texture. The exterior can be seared on all sides for 10-15 minutes and the meat then be left to rest in a low oven for around a quarter of an hour to produce a tender, flavoursome meat.

A good size piece ideal for the barbecue over an open flame or grill. One piece is suitable for 3-4 people as a main course.
